Probably the most famous woodruff dish is jelly. This can be done easily and without great effort. Detailed instructions can be found here.
If you think of woodruff, you obviously have the poisonous green jelly in your head. There are actually only two factors here - either you like them or you don't like them. Children especially love this wobbly food, but adults also enjoy the delicious dessert. If you don't want to use ready-made products for the famous jelly, you can also make the food yourself with little effort.
Green jelly: recipe and instructions
For 4 people Waldmeister pudding you need:
- 1 bunch of woodruff
- 500ml water
- 1-2 tablespoons of lemon juice
- 60g sugar
- green food coloring
- 40g cornstarch
1 Wash the woodruff and then dry it thoroughly. Then place it spread out on a kitchen towel and dry for two days so that it can develop its aroma.
2 Now put the dried woodruff in a saucepan and pour in 450 ml of water. Bring the whole thing to a boil. Once the water has boiled, pull the pot away and let the contents soak for 5 to 10 minutes. After this brewing time, take out the woodruff leaves, add sugar and lemon juice and the green food coloring and bring the liquid to a boil again.
3 Mix the cornstarch with the remaining 50 ml of water in a bowl and add it to the boiling woodruff-sugar mixture. The mass is boiled again and then poured into dessert bowls or a large bowl. Once the pudding has cooled, you can serve it. Either pure or with whipped cream or vanilla sauce.
You do not have to add the green food coloring, it only provides the classic green color, because without adding color the pudding is not green, but rather light.
»My tip: jelly with gelatin
If you want to make a classic jelly from childhood, use 6 sheets of gelatin or agar for vegetarians instead of cornstarch.
The preparation is the same as for the pudding recipe. Allow the water-Waldmeister-sugar mixture to soak and soak the gelatine leaves in cold water.
Then heat the dripping wet gelatin in a saucepan until it has completely dissolved and mix 3 tablespoons of the woodruff mixture with the soaked gelatin. Only then should you pour the gelatin completely into the woodruff pot and fill the god food in a bowl or bowl. Chilled, the jelly is cold and gelled after about 4 hours.
